WW Pretzel Covered Chicken Tenders

Hey! How are we doing? I’m sitting on pins and needles – we have 3 days left with students and I SHOULD have news tomorrow!

Got this in my email from Weight Watchers! 3 points! And it looks great.


  • white all-purpose flour
    3 Tbsp
  • kosher salt
    1 tsp
  • black pepper
    ¼ tsp
  • egg(s)
    1 large
  • plain salted hard pretzel
    3 ½ oz, crushed (coarse or fine)
  • uncooked boneless skinless chicken breast
    1 pound(s), tenderloins
  • cooking spray
    5 spray(s)
  • honey mustard
    2 Tbsp
  • whole-grain mustard
    1 Tbsp
  • light mayonnaise
    1 Tbsp
  • water
    1 Tbsp, warm

  1. Preheat oven to 450°F. Place a wire rack over a baking sheet; lightly coat rack with cooking spray.
  2. Combine flour, salt and pepper in a small shallow bowl. Beat egg in a second shallow bowl. Place crushed pretzels in a third shallow bowl. Dip each chicken tender first in flour mixture; shake off any excess. Next dip in egg and then in crushed pretzels; turn to coat. Place on prepared rack in a single layer. Repeat with remaining ingredients; bake until cooked through, about 15 minutes.
  3. While chicken cooks, whisk together both mustards, mayonnaise and water; serve with chicken.
  4. Serving size: 2 1/2 oz chicken plus 2 1/2 tsp sauce
