Good evening everyone! I know it’s been a while since I’ve shared something on here but I threw this together tonight and, WOW, it turned out better than I thought it would. If you’re not into bacon you can leave that out but substitute another type of fat to cook the veggies in.
Take a package of thick cut bacon and cut it into chunks and render it down.
While that’s rendering, slice up a small head of cabbage and a sweet onion.
When the bacon is done, take out the chunks and toss the cabbage and onion into the bacon grease
Then cut up baby carrots into strips
Take Campari tomatoes and quarter them, or any other kind of tomato you want.
When the cabbage and onion have cooked down some, toss in the tomatoes and carrots.
Season liberally with Mrs. Dash garlic and herb blend and original blend with some black pepper
While this is cooking, fix up a cup of brown rice by following the directions.
In the veggies, toss back in the bacon pieces, then add in half a bag of frozen Italian green beans and half a bag of frozen peas.
When the rice is done add that in.
Mix well and enjoy. It actually is very filling.
