Hey there, y’all. I haven’t posted in a while but have since discovered something I like very much and had to share. I follow a food blog on tumblr and they’ve been sharing a lot of cold summer salads. Here’s one I put together with my favorite veggies and fajita beef.
All diced to your desired size.
1 of each – green, red, yellow bell peppers
1/2 red onion or more if you like
3 celery stalks
3 small pickling cucumbers
1 package cherry tomatoes halved
1 package Ginger teriyaki veggies (contains: broccoli, shaved brussel sprouts, snow peas, carrots, kale, and I think some chopped cabbage, too, but can’t remember. also has 1 liquid seasoning pouch but I don’t use it.)
1 package fajita beef
3/4 cup cooked red quinoa
1/2 package feta crumbles
1 heaping tablespoon of minced garlic (or less if not your thing)
1 tablespoon garlic and herb powder divided into 1 teaspoon servings (or less if not your thing)
1/2 tablespoon crushed red pepper flakes
1/2 teaspoon coconut oil to cook the beef in
sesame oil and balsamic vinegar to taste
Directions: Put the quinoa on to cook following package directions. Start the beef cooking in a large skillet with the coconut oil, minced garlic, and garlic/herb powder. While that’s cooking take all the veggies and dump them in a very large bowl with the feta, the rest of the garlic/herb powder, crushed red pepper flakes, sesame oil and balsamic vinegar. Once the beef is done, use tongs to remove it from the pan and put it on top of all the veggies and feta leaving the juices and any remaining garlic in the pan. Once the quinoa is done add that to the skillet for a few minutes to let it soak up all the juices and garlic bits, then dump into the bowl. Mix everything together and serve.
This made enough for me for lunches for work for 3 days, lunch today, and probably dinner too … cuz now I’m getting hungry again, lol.
