I don’t know about you, but pizza is something that I never tire of. Especially the home-made variety with my own pizza base. But oh, the carbs in it. And the cheese on top. Giving it up has been very hard. But now I have found my new obsession. Cauliflower pizza. Keep an open mind – of course it tastes different, but you won’t believe how delicious a pizza made with cauliflower can be. And it’s not a soggy base of stodge, either, but a solid flatbread much like a conventional pizza base. And at only 6 SmartPoints a pop, this is perfect for dinner.
Ingredients:
half a head of cauliflower
2 eggs
100g flour
100g grated mozzarella (light)
salt/pepper
half a small tin of chopped tomatoes
2 large onions
50g grated mozzarella (light)
granulated garlic, salt, pepper, dried herbs
Parma ham or cooked chicken breast
Instructions:
Cut the cauliflower head into small pieces and whizz them up in a food processor, breaking them into pieces the size of rice grains. In a bowl, mix the cauliflower bits with the eggs, flour and 100g mozzarella. Season with salt and pepper. Spread the mixture on a baking tray. Should be about half a centimeter thick. Bake for 20 minutes at 200°C in the oven.
In the meantime season the chopped tomatoes with salt, pepper, garlic and herbs. Take the cauliflower base from the oven. It should be browned and crispy around the edges and not look moist anymore. Spread the tomato on the cauliflower base, then add the onion slices (and other vegetables to your liking) on it. Spread Parma ham on top, or sprinkle with shredded chicken pieces. Lastly sprinkle the remaining mozzarella on top.
Bake 10 to 15 minutes.
The recipe makes 4 pizza slices, so one slice has 6 points. If your family doesn’t like cauliflower, make the pizza for yourself and freeze the remaining slices. They can be easily re-heated, taste just as good, and make a great lunch for work if you can warm it in a microwave.

I’ve heard rumors that you can buy rice made of cauliflower and it tastes a LOT like rice. Just not the carbs!

My sense of taste is probably not very good, but I have to say that I don’t really taste the cauliflower at all. The family says that the cauliflower is discernible, but I think the cheese and the pizza topping are stronger. Anyway, hope you try it and make it.

Yes. It comes in bags found in the produce section. Costco ( Big Store) sells it – but you make your own by whizzing the florets in a blender or processor. It’s very good, especially sautéed with mushrooms.

I think anything you might mix into rice would work well, such as peas, onions, nuts, raisins, chopped pepper if you like it, etc.

I love Asian food. I’ve discovered the majority of it is healthy – as long as I don’t put it over rice. That said, I’m going to hunt up or make some cauliflower ‘rice’ and try it instead!
