Cajun Chicken with a dash of Curry

Ingredients:

1 family size package boneless, skinless chicken thighs (I had one with 11 in it.)

Half a bag of halved brussels sprouts

10-12 stalks asparagus cut into 3rds

1 green bell pepper diced

1 cup shredded carrot

2 table spoons olive oil

1 table spoon diced garlic

Garlic powder, McCormick Cajun seasoning, crushed red pepper flakes, and 2-3 shakes of curry powder to taste.

Directions:

Put the olive oil in the pan to warm, smearing it around so it coats the entire surface, use medium-medium high heat

Lay in all the chicken and sprinkle on the seasonings

Let cook for about 3 to 5 min on 1 side

Flip the chicken to cook another 3-5 min on the other side adding more of the powder seasonings

Once the chicken is mostly cooked through take it out and set aside

Add in all the veggies, the diced garlic, a little more olive oil, and more of the powder seasoning, cover and let steam for about 5 min.

After the 5 min add the chicken back in, cover again, and let it all steam together until the chicken is cooked through and the veggies are fork tender with some bite left in them.

You can add rice if you like to this or even leave out the curry but I love the smell of it cooking.  If you’re an onion lover you can put onion in it too.  I just experimented with this tonight and really loved how it turned out.  This amount will give you a meal for dinner and lunches for about two days for work if you give yourself about 2 pieces of chicken.  ENJOY!!!

  1. I tried your recipe last night, adding red onions and substituting red and yellow sweet peppers for the green. It was really good. We love brussel sprouts and asparagus and they turned out really nicely. Next time I will up the spice quantity too. Thanks for the new dinner idea!
