Rigatoni with Sweet Bell Peppers

Rigatoni bell peppers

I recall making this once and it was pretty good! 7 Smart Points per serving!!!

Total Time:

  • 2 spray(s) cooking spray
  • 2 tsp olive oil
  • 1 large sweet red pepper(s), chopped
  • 1 large yellow pepper(s), chopped
  • 28 oz canned diced tomatoes, plum, with juice
  • 1 small uncooked onion(s), yellow, chopped
  • 1/4 cup(s) fresh parsley, flat-leaf, chopped
  • 3 clove(s), medium garlic clove(s), minced
  • 1 1/2 tsp dried basil, or 1 tbsp fresh
  • 1/2 tsp table salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 12 oz uncooked rigatoni, cooked and kept hot
  • 3 Tbsp grated Parmesan cheese

Coat a large skillet with cooking spray; add oil and heat over medium-high heat. Add peppers; sauté until slightly tender, about 3 minutes. Cover pan and allow to cook until softened, stirring a few times, about 3 minutes more.

Add tomatoes, onion, parsley, garlic and basil; stir, increase heat to high and bring to a boil. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until most of liquid has evaporated, about 10 minutes; season to taste. Serve sauce over pasta; sprinkle with cheese.

Yields about 1 cup pasta, 1/3 cup sauce and 1 1/2 teaspoons cheese per serving.

Notes: Garnish with freshly sliced basil.

Tomorrow’s Friday! Anyone have any weekend plans? I am cleaning house. I say that every week, but it’s a necessary need. My Christmas ornaments and tree while down and packed, are taking up serious space in my dining room. I’m rearranging my family room – I’m expecting a nice nice over time check I hope this coming check and while I plan on putting most of it in the Emergency Slush Fund, I am buying a futon so we can waller while watching Castlevania 2. (I’ll be honest – I’ve not watched the 2nd season of Berlin Station either. Bad bad bad Zee!)

  1. You are very bad Zee, I’m shocked at how bad. Commando? I didn’t know we were doing this. Hmmm, well I suppose it does not matter. If he is like most men, (suspect he is) the outer wear 👖if needs require, would be off in less than a second anyway. 😊 I like BS S2 and got a copy of that from the hubs, we have only rewatched the first disc before we started watching nominated films. We are done with those so back to BS I hope.

    1. I’ve burned BS 2, but haven’t watched it. I have a social event tomorrow night (no, not a date!) and a house in serious need of attention, so that’s what I’m doing this weekend. I’m hoping my bonus comes through with my next paycheck and I can buy a futon and then the weekend after that, I’ll binge watch on Saturday!

      And yes, I’m very bad. As this is an RA group, yes, there will be Richarding!

  2. Sorry, but what is a cooking spray? I always cook a pasta sauce with olive oil. I will try the recipe, because I like the variations of pasta.
    Here it is raining, raining, raining, and to warm for winter, so I will do some homework and will cleaning out the wardrobe of my children. I wait with my wardrobe a while longer until I have lost some weight. (ahem)


    1. Cooking spray? It’s Pam or something similar. An non-oil or non-butter substitute for non-stick. Less calories, I guess.

      As most who know me will tell you, I spent several years saying – i’m going to wait until I’ve lost 10 pounds, 2 dress sizes, before buying more clothes. (Not to mention, I’ve been in a rough spot financially) I decided about 18 months ago that you know, there is no guarantee I’ll live long enough to lose that weight, so why not look nice and feel good about myself NOW? I’ve found several REASONABLY priced online places that make quality clothes, that have reasonable return policies as well as pretty, inexpensive wide width shoes and I’ve just gone berserk. I figure if/when the weight comes off, someone in need will have a beautiful outfit/wardrobe. Right now, I’m feeling much more confident than I did before and while I’m no model, I like how I FEEL in nicer, stylish clothes.

      I’m on the coast of Georgia. We have WARM days… and then we don’t. Personally, I prefer 6 weeks of cold weather, that way we have fewer mosquitoes, sand gnats and no Love Bug Apocalypse!
